Gluten-free Valencia Cake

Hello, Chris here.  I’m the lead product developer for the new Gluten-free Orange Valencia Cake.  Today, I’d like to share a behind the scenes look into the development of a delicious and gluten-free cake.  We start with just seven simple ingredients (eggs, Valencia orange pulp, almonds, sugar, orange peel, gluten-free baking powder, and orange oil) and carefully blend them together in small batches at our partner bakery.  Because gluten can easily contaminate through pans, tools and even in the air, the bakery has a special gluten-free zone with dedicated equipment, pans and washing stations. 

After the cake batter is made, it’s transferred to the batter depositor that pushes batter into baking cups (think of a hose nozzle, but instead of water, batter comes out).  The cakes are then hand-sprinkled with slivered almonds baked. Just 35 minutes later, little golden orange cakes emerge.  When the cakes are cooled, they are put through a machine called a “doughboy” wrapper. This machine individually wraps the cakes to prevent gluten contamination during transit and handling.  We ensure the product is gluten-free by lab testing the cakes every day (less than 20 parts per million) before they are shipped to our stores. Our partners have been trained to serve the cake in their wrappers to protect our gluten-sensitive customers. 

As you can see, a lot of care and attention goes into each and every cake we make. I hope you enjoy this moist and delicious Valencia Orange Cake as much as I do (and I am not even gluten-sensitive)!

I just tried the product today - very good.  My hats off to all involved.  However, why such a polarizing product in tight financial times? Shouldn't Starbucks be aiming for big wins?? Bigger profit margins??

Are you telling us that there is no other grain-based flour in this product?  Many gluten-free products are made from rice flour.  Unfortunately my son is allergic to gluten, rice and soy.  Is this new product safe for him and others with multiple food allergies?

Thank you thank you-- my 5 yr old daughter will be so excited--she is anaphylactic (severe allergies) to gluten!! She loves Starbucks but always was sad she couldn't get any food there-- we always had to bring our own treat-- but no more!!  This is a great product not only for celiacs but for people with allergies to gluten too!!!

I totally relate to Love Valencia and Iridescent.  I was so disappointed when the valencia flavor was removed from our coffee flavor options.  I do hope that it is added back to the drink menu.  I have not yet had the opportunity to try the new Valencia gluten-free cake, because we live in a small town that does not have a Starbucks.  I surely do miss Starbucks!  When I visit places where Starbucks is available I cannot wait to try it!

Thank you so much for offering something gluten-free.  The only problem is that I have multiple food allergies, including eggs & dairy.  I also avoid nuts when possible b/c my nephew is severely allergic to them.  So, the ultimate challenge, and the greatest thing I could ever hope for from Starbucks, would be a vegan pastry -- one that is nut free and made in a factory dedicated to allergy-free foods.   If Whole Foods can carry such food items, I believe it is possible for Starbucks!

Thank you - I need to check to see if any of the Rhode Island Starbucks are carrying this new treat.  My daughter was diagnosed with Crohns this year and Wheat and Wheat Gluten are her absolute nemisis - this will be wonderful  if availble around here as  a teenager its not fun being odd person out when her friends  stop for a Starbucks break.   Sounds like you are getting  great feedback - any thoughts of adding Chocolate and berry flavor?

I was just wondering when Starbucks would catch on to the needs of the Gluten Intolerant. I was staring at the new pairings menu just wondering when I might be able to enjoy a nice tall iced or hot coffee with a gluten free muffin......(sigh) Thank you for making my dream come true. I'm going back to StarBucks after being disouraged and trying not to go because there was nothing I could eat with my drink.

This is great news, is it in FL yet?  I am a 61 1/2 yr old celiac (aware since age 27). I have been eating the Marshmallow Bars. Up to now I have been drooling at all the delicious goodies.  How about adding a GF cinnamon crumb/sour cream coffee cake?    My 92 yr old mom, also GF loves your awake tea and also the Marshmallow Bars.  We will try the new addition as soon as it is available.

I just found out that you have a gluten free treat.  I think one of  the hardest parts of my diagnosis of celiac disease has been to go for coffee with my friends, and watch them get a pastry and not be able to have anything to eat myself.   That was my joy.  Now I can eat as well.   Yea!!!!!!!!!!  I would love gluten free oat meal if you really want to please a gluten free devotee of Starbucks!

I am dreaming of biscotti next.  I love Pamela's and they are already individually wrapped.  I love to dip a crunchy biscotti in my coffee and it would be great if there could be gluten-free biscotti at Starbucks.

I was also soooooooo thrilled that Starbucks was going to have something those of us with CELIAC DISEASE can eat there, that I went right down there this morning and bought all 4 muffins that my store had. Yeah!! And, I am in a gluten-free group locally, and plan to immediately send all 50 of the members of this news, so they can enjoy the new treat. The muffins are unbelievably YUMMY!!!!!!!

Popped into one of your stores intending to just get a drink as usual.  There was a line, so as usually I was looking longingly at the pastry display.  

There at the top was a gluten free orange cake!!!  I was thrilled but was a little put off by the fact that it was displayed unwrapped in a case full of gluten filled pastry's.  

I asked about it and she asked if I wanted one.  I took a risk and said I would take one.  Low and behold she pulled a wrapped cake from under the pastry counter.  

The cake was so wonderful and moist!!!  I ate the whole thing on the ride home.  It was also very filling.  Next time I'll have to order a tall drink to go with it instead of my usual Venti!!!  

I am absolutely thrilled with these cakes.  I hope you have a lot of them in production because I predict you'll be selling out often.

Thank you, thank you, THANK YOU!!!    A friend forwarded the Starbucks newsletter to me today to share the news of the new GF treat and I was out the door and headed to Starbucks as soon as I read it.  

I can NOT believe how delicious it is!  So light, so moist....it tastes like "real" cake.      I love it, and will definitely be going back for more.   Thank you for finally providing a GF treat for all us gluten-sensitive folks.  I can't tell you how many times I gazed mournfully at the dessert case at Starbucks and wished there was something there for me.

And yeah, a chocolate version would be really awesome!!!

Your new Valencia gluten-free orange cake sounds delicious, and now I have a solid reason to go to Starbucks soon. Also, my daughter is looking forward to checking it out soon for her GlutenFreeLI  blog.

Having gluten-free snack makes it more likely not only celiacs (or anyone with allergy or sensitivity to gluten) will go to Starbucks, but that they'll suggest Starbucks as destination for those  going for drink and snack with them.

I went to my local Starbucks and they didn't have the GF orange cake....I was very excited to try this since I have Celiac's disease, but I was rather disappointed.  The workers there didn't even know what I was talking about...you would have thought they would have gotten a memo from Corporate.  I guess I will try another store.

I just want to say thank you SO MUCH for offering this. I'd stopped going to Starbucks because it was too depressing to see all those tasty treats I can no longer eat as someone who's gluten-free. My friend told me today that she saw gluten-free cakes at Starbucks and I went immediately over and sampled it. HEAVEN! It's so tasty and pairs perfectly with the coffee. I'll be a once-a-day customer once again, and hope that other gluten-free treats are in the works. Keep it up, Starbucks!!

This is the best gluten free sweet treat that I have tasted. We are new to the gluten free thing...but my 5 year old is very excited to be able to have something from Starbucks. Both my girls have issues with dyes and preservatives, so there are very few things on the menu they can enjoy.

We tested this cake today, my friend who is also is gluten free....and we all concur, WE WANT MORE OF THAT!!

Thank you so much for adding a gluten free menu item.  My husband is Celiac and I decided to try the cake myself.  It was really good even by the standards of someone who can eat gluten.  It was really moist and tasty and the price was reasonable.  So often the gluten free stuff is dry and tasteless and over priced!

Gluten-free cake at Starbucks is SUCH good news! My 16-year-old daughter has celiac disease, and though we manage to eat out fairly often, it's tricky to get any kind of dessert other than ice cream. I just tried this cake at the Magazine Street Starbucks in New Orleans and all I can say is...WAY TO GO STARBUCKS!!!  It was moist and delicious and according to the nutrition facts it even has 9 grams of protein.  

I LOVE IT and thanks for a price that is comparable to the other pastry items.

I just wanted to say thumbs up Starbucks! I am new to the gluten free diet. Let me tell you Iam addicted to this muffin. My hubby even got me one for my mother's day breakfast. Please keep cranking out the good stuff:)

I can't wait to try them!   Thank you, thank you, thank you.  The closest gluten-free bakery is an hour and a half away, but now I'll have something much closer!  THANK YOU!

I love these!!!  But - I am oncerned that they won't have much of a life in the stores.  There is no in store advertising except for in the case beside the cake.  I for one, who have not eaten anything containing wheat for four years now, do NOT look into the food case because I know there isn't anything there for me.  How am I (and fellow gluten free customers) to know this is there.  PLEASE PLEASE PLEASE allow the store to put up some signs offering this.  I fear that because they will not sell, they will no longer be offered.  I love this with my iced Americano and will hate to see it stop being produced.

I tried the gluten free cake this morning.  One of my sons is on gluten free/dairy free diet.  It is AMAZING.  It is always hard to go out casually with the whole family because of the diet restriction.  Everyone had something that they loved including my son who is on a restricted diet.  We all took a little taste of it and everyone loved it.  Please keep it in all your stores and come up with more GF/Dairy Free items.  You guys can do no wrong in my eyes.  My whole family thanks you!!!!

OMG...... I love you Starbucks.  I have celiac disease and miss a moring muffin on the go.  I would stop at Starbucks for coffee, then have to go elsewhere for breakfast....  I was SO excited to see the muffins this morning. When I asked they said they had them for the last month. I am a daily customer, but this is the first time I have seen them (they had them on the register counter)  So please, think about a media blitz for the GF muffin, so all of us have a chance to buy them.  I would hate for them to be discontinued just because we are unaware that they exist.  Oh, and by the way,  THEY ARE WONDERFUL, AND MOIST!  A rarity in GF muffins!!!Thanks Starbucks

thanks for tackling gluten-free baking, but keep on trying! when i tool this lovely morsel out of the wrapper i tasted mostly the paper square bottom. maybe it was nuts that were aging, but the orange fell 2nd to the paper smell (and this taste.) i probably won't be giving it a 2nd shot. sorry.
