Gluten-free Valencia Cake

Hello, Chris here.  I’m the lead product developer for the new Gluten-free Orange Valencia Cake.  Today, I’d like to share a behind the scenes look into the development of a delicious and gluten-free cake.  We start with just seven simple ingredients (eggs, Valencia orange pulp, almonds, sugar, orange peel, gluten-free baking powder, and orange oil) and carefully blend them together in small batches at our partner bakery.  Because gluten can easily contaminate through pans, tools and even in the air, the bakery has a special gluten-free zone with dedicated equipment, pans and washing stations. 

After the cake batter is made, it’s transferred to the batter depositor that pushes batter into baking cups (think of a hose nozzle, but instead of water, batter comes out).  The cakes are then hand-sprinkled with slivered almonds baked. Just 35 minutes later, little golden orange cakes emerge.  When the cakes are cooled, they are put through a machine called a “doughboy” wrapper. This machine individually wraps the cakes to prevent gluten contamination during transit and handling.  We ensure the product is gluten-free by lab testing the cakes every day (less than 20 parts per million) before they are shipped to our stores. Our partners have been trained to serve the cake in their wrappers to protect our gluten-sensitive customers. 

As you can see, a lot of care and attention goes into each and every cake we make. I hope you enjoy this moist and delicious Valencia Orange Cake as much as I do (and I am not even gluten-sensitive)!

Thank you all for the amazing comments.  What a great positive response!   In fact, my snack yesterday afternoon was a Valencia Orange Cake.  (Of course, I like to call this research.) I love how refreshingly light and satisfying it is.  

Did I mention that the cake is close to 25% almonds?  That’s almost an ounce of heart-healthy monounsaturated fat, high in protein, potassium, calcium, phosphorous, vitamin E, Magnesium and fiber.  

Also, keep in mind the cake has no preservatives, so please eat it fresh after buying it from your Starbucks store.

I love it!!!! I am just sorry that one of my favorite Starbucks isn't going to carry it anymore because they don't sell enough. Please don't take it away...it's amazing and I am thankful because I can eat it!!!

Thank you for this great muffin.  It has been a long time since I could go into any coffe house and get something gluten free.  This is one of the best tasting muffins I have ever eaten.  I hope you continue to supply them.  I have been telling everyone to try them.  Again Starbuck's is ahead of the curve!

Chris, Thank you for creating the Awesome Valencia Orange Cake!  My son was at Starbucks today and saw it and to his surprise it was gluten free.  I have Celiac's so my wonderful son bought two muffins one for me and one for himself.  It was so yummy!!  Keep up the good work and I look forward to you and Starbucks creating more GF products.

AMAZING!! Normalcy again! Thank you Starbucks for giving a damn about your customers. As someone that works on assisting businesses stay successful on a daily basis, one thing I always tell them is to listen to their customers...and now I have a great real-life example to use! You listened to our concerns and comments and I know my fellow gluten free customers are  all jumping in joy! Keep up the great work and take a moment to pat yourselves on the back. THANKS!

A great tasting gluten free snack -- nirvana!  

Please add protein content to the ingredients list.  

With eggs listed as the first ingredient there must be enough protein to qualifiy this as a breakfast food.

Thank you SOOOOOOOOOO much!  This cake was an incredible surprise for me this morning, since I can never eat anything at Starbucks excepth the coffee. Not only gluten-free, but dairy-free  too (so important for Celiac's) AND so healthy, AND most of all sooooo yummy!  I truly can not thank you enough.  Thank you! Thank you!  Thank you!  The respect I have for Starbuck's just jumped many nothches.

My Starbucks told me they could order the gluten-free cake but that I could have a rice krispie treat now. I doubt that the rice krispie treats are gluten-free as they probably contain barley malt. I'm trying to find the ingredients lists. I can't wait until all Starbucks locations carry the GF cake.

I am so happy to see this! I just called everyone I know. I think I can speak for a lot of gluten-intolerant people by saying that, whenever I see any gluten free product being offered, I get so excited! We fight every day to help people understand our struggles and to get the word out about gluten and Celiac disease.  To see places like Starbucks take the stand and help us, not only be able to eat, but also to get the word out... It makes me speechless. I cannot express how thankful I am and I hope this product is as much of a hit as I think it will be. Thank you, Starbucks! I will choose you over any other coffee shop now simply because of this!

As soon as I heard about this, I went straight to Starbucks. In fact, I went to every Starbucks in town until I found one that carried this. This made my day! I will go to Starbucks all the time now and I have told everyone I know. This really, really excites me. If people see gluten-free at Starbucks, the word about gluten & Celiac Disease will get out. This is huge!! It's gluten free AND delicious! And I can get it at my favorite Starbucks. Please keep this coming!!! You have seriously changed many lives with this small (but wonderful) addition! Having a wheat allergy (but not celiacs), I have missed being able to have a pastry at Starbucks. I have been checking labels and the crispy rice treat is good, as is the oatmeal, and your yogurts (the granola is wheat free, but not gluten free).

Thank you for the Gluten Free Valencia cake, which is moist and delicious. Just one comment - Since it doesn't have preservatives, they mold quickly. I had one at my local Starbucks from a batch that arrived the day before and had already started to spoil in the fridge. It was replaced quickly and with profuse apologies.

And I concur. A chocolate version would be outstanding!

OH MY GOSH THIS VALENCIA LIL CAKE is AWESOME!!!!!!  my grandmother use to make a orange cake and this is the closest thing I have had that well....ya know... it is better than hers.  Thank you for tender loving care it making this wonderful delight!!!!

Was across the line last weekend and was so excited to try one (Ok, I bought the last 3 in the store!) It was SO great to be able to get coffee AND a treat... and to know that it was SAFE! Any talk of these delicious gf goodies coming to Canada!?! I know I'm not the only one waiting....

Problem is after seeing it for a couple weeks here in the San Jose, CA area, it seems to have disappeared. What happened? Clearly, after this kind of response (5th most commented blog post), you guys can't think that this product won't sustain healthy sales?

Please bring it back or ship more to the stores. The GF community won't let you down.

All the Starbucks stores I've checked in San Francisco, and 2 in the Central Valley, are out of the cakes or have chosen to no longer carry them. Please send more to stores, and strongly encourage individual stores to carry this product! If I can't reliably find this cake, I doubt I'll take the time to go hunt for it. Thanks!

It's great that we have a gluten-free pastry, but it would be so much better if it were vegan. All that would have to be omitted would be the eggs, which are easily replaced with EnerG egg replacer or something similar. I am glad Starbucks has this, but very disappointed at the same time that it is not vegan when it could very, very easily be.

I'm in the same boat with ChaiLadie - I used to cheat with the Pumpkin Cream Cheese Muffins, and then would be so sick! I'm so excited to have a yummy treat to enjoy that won't make me sick - and it is SO GOOD! I'm dying to know your secret - it's delicious, moist, not at all dry or crumbly ... it takes like "real" cake. My husband even liked it (and he's not GF). Thank you, thank you, thank you! Please keep the flavors coming! (like ... maybe pumpkin cream cheese muffins for fall?)

Love, Love, Love this cake, finally I can go to a Starbucks with my husband while we travel and get something with my coffee! BUT I hate to say it, one we bought was moldy, did not know it until a big bite was in my husbands mouth and I turned it over(because we split one) and saw mold. Took it back and was told this was not the first time they had mold. Are they supposed to be refrigerated? this would help.

I went to my local Starbucks yesterday a.m. to get my now-routine gf orange cake and coffee. Was dismayed to hear that they were out of the cake, but was quickly assured that "no, no - we're just out today - we'll have more in soon!"

Ok. Whew - because I've come to rely on that gf cake as a bit of sanity in my insane gf everyday life. Knowing it's there makes my life so much easier, so much more "normal"-feeling.

Much later in the day I was insanely hungry, having a bad day, and had to head to JFK airport asap. I ran into the Starbucks at Union Square, again, seeking gf cake and coffee, only to be told "not only do we not have any cakes, but they've discontinued them."

Long story short: what the hell, Starbucks?!? No announcement, no update online. I see that the "you asked, we listened" sidebar about the gf cake if off the website - how about an update?

I was honestly not a big Starbucks fan until the gf cake came out.  I don't really like the coffee and I much preferred going to local coffee shops and bringing my own treats - or to purveyors who offered me gf options. I made an almost wholesale switch to Starbucks after the cake came out and had high hopes that more was to come in terms of gf offerings. Hopes dashed! Please tell me I needn't fret, that this is all preamble to the launch of a new gf line! Please?

So, perhaps an easier option that would be popular with more of your customers and cost effective is rice crispy treat,  just buy GF rice puffs make your own fluff or use corn syrup and you're good to go. You can even dress 'em up with dried fruit or chocolate chips. What do you think?

I cannot underestimate how much I loved the gluten free orange valencia cake! It drew me to Starbucks before any other coffee shop simply because I knew I could get a pastry to enjoy with my tall soy iced chai that wouldn't make me sick!  I appreciate the effort to still include the gluten-free community in your food options, but, like others have said, KIND bars (or any other bar) are often one of our staples - not as much of a treat as a real, sweet, moist gluten-free pastry! And this one was excellent.

Any chance of resurrecting it or another treat like it? My deepest thanks to the chef - this was one of the better GF pastries I'd had.

I *cannot* believe that you would task this incredible chef with this responsibility, have him pull it off this well, and then less than 3 months after the fact, pull it from your stores.

It is quite akin to your spitting in the face of every Gluten free customer that you proudly told less than a quarter ago that you put our ideas into action. And offering the KINDSnacks bar as a consolation prize pretty much finishes it off..

Here's an idea to put into action -- why don't you sell the recipe to Dunkin Donuts and we can take ALL of our business over there. At least they didn't claim to care enough about us to do this and then 3 months later forget that they cared.

I am so disappointed these have been discontinued.  It seems that if you are not part of the "normal" population you are out of luck and if it doesn't make lots of money nobody cares.  The funny part is many times my local store was selling out of them,  Kind bars are not the same option.  I can buy them in the store and can carry them with me where I am going and for less money then you sell them for.  It was nice to feel normal and have a fresh trest like anybody else I was with.  I will probably not frequent your store as much since there are many other places I can get a just a cup of coffee or a latte.

I, like others on this forum, was thrilled to see Starbucks offer the gluten-free valencia cakes. And, like the others, I'm frustrated and angered at starbucks for discontinuing them.

But, I also want to add a thought about why Starbucks corporate might have a skewed perspective on how these cakes did in the market.

I have seen the following with these cakes:

1) Baristas unwrapping them and stacking them in the case, despite the label on the package that says they're individually wrapped to prevent cross-contamination with wheat products.

2) Baristas who have NO idea what I'm talking about when I ask for "the gluten free orange cakes," "the valencia orange cakes," "the little orange cakes that are individually wrapped and gluten free," and every other description I could come up with.

3) (Personally the most frustrating) The cakes kept in their box in a cabinet and not displayed at all. When I asked for them specifically, no one knew what I meant. When I asked to speak to a manager, someone went to the cabinet, took out the box, and said, "Do you mean these?"

If corporate thinks the cakes didn't sell well, then they are probably getting the skewed results that come from a staff not properly trained in what the cakes were and how to display them. Hiding them is a GREAT way to get people to NOT buy them.

Unfortunately, my twice a day Starbucks habit seems a little sad, now... Like others, I feel that starbucks made an offer to its customers with wheat allergies and celiac and then withdrew it, no questions asked.

maybe it's time to save those dollars and go to the grocery store to get gluten-free treats.

Can't believe that we are back to square one.  Nothing safe for us to have if we go to socialize at Starbucks.  There was not enough advertisement of the product, many people just finding out about it in the past few weeks.  Not enough training of staff (my niece is a manager and didn't have any information to display or advertise at her store).  

Please , please try again.  Either with the orange cakes, a simple coconut macaroon or a brownie.  All can be made GF and individually wrapped.  The macaroon and the brownie would probably have a better shelf life.  Maybe you can check out the new Betty Crocker brownie mix.  Please try so that we can enjoy something along with everyone else.

I recently went into a starbucks and requested the valencia gluten free cake, but I was sooooo disappointed to hear it was their understanding that the cakes had been discontinued. Is this true?

Now that I find that it is true that the gluten free cakes have been discontinued I am not only disappointed but sad. I just came back from a trip to Italy where there are entire restaurants with all gluten free food. I ate pizza for the first time in 10 years. It tasted fabulous.  Not all restaurants had gluten free food but many at least had something to offer. They even had gluten free ice cream cones in gelaterias.

The point is  that there is a huge population out there who need and will buy gluten free food, if it is available, tastes good (like the cake did - yum), and know that  it exists. In the case of the valencia cake there was almost no advertising of the product. I only found out about it because a friend sent me an email with the announcement. I concur with the previous writers that the employees in the starbuck stores did not know what I was talking about when I asked for the valencia cakes. They barely knew that it had been discontinued, several people had to be consulted to give me a vague answer. If the employees don't know about a product how can the customer find out...??? And there were no signs in the stores - it was basically a phantom product that never had a chance to succeed.

Starbucks please, please reconsider. Come up with a good marketing and advertising plan that will draw customers - this is an untapped market that needs to be taken advantage of. Think of Italy and how that culture makes an effort to serve an underserved population and how it can make you $$$$

Bring back the Valencia Orange Cakes!  The product was fantastic and should have been cross-marketed as an almond cake any pastry-lover would enjoy.  (The texture is . . . was . . . divine.)  This product was never properly introduced to gluten-free consumers, nor traditional consumers.  Try again.  Leave the Kind bar to every other food retailer in town (yawn).

I have previously sent an e-mail to customer service with no response from them about my severe disappointment in Starbucks for discontinuing the much loved gluten free cake.  I have recently become aware of a gluten issue (allergy vs. celiac disease).  I was overjoyed that Starbucks hade the forethought and good business sense to add something to their product line for the 1 in 133 human beings that have gluten issues.  I too agree that the product was never advertised and my local store staff (as others have stated knew little or nothing about the cake)  2 thumbs down to Starbucks for teasing those of us who have special dietary needs.  I for one am boycotting Starbucks.

Why won't starbucks start using almond milk instead of soy or as an other option? I would go to starbucks more often if you did! And so would more health-concious people, raw foodists, vegans, people with allergies..etc.!

SOY DANGERS:

High levels of phytic acid in soy reduce assimilation of calcium, magnesium, copper, iron and zinc. Phytic acid in soy is not neutralized by ordinary preparation methods such as soaking, sprouting and long, slow cooking. High phytate diets have caused growth problems in children.

Trypsin inhibitors in soy interfere with protein digestion and may cause pancreatic orders. In test animals soy containing trypsin inhibitors caused stunted growth.

Soy phytoestrogens disrupt endocrine function and have the potential to cause infertility and to promote *** cancer in adult women.

Soy phytoestrogens are potent antithyroid agents that cause hypothyroidism and may cause thyroid cancer. In infants, consumption of soy formula has been linked to autoimmune thyroid disease.

Vitamin B12 analogs in soy are not absorbed and actually increase the body’s requirement for B12.

Soy foods increase the body’s requirement for vitamin D.

Fragile proteins are denatured during high temperature processing to make soy protein isolate and textured vegetable protein.

Processing of soy protein results in the formation of toxic lysinoalanine and highly carcinogenic nitrosamines.

Free glutamic acid or MSG, a potent neurotoxin, is formed during soy food processing and added to many soy foods.

Soy foods contain high levels of aluminum which is toxic to the nervous system and the kidneys.

I really liked the Orange muffin and got one each time I went to Starbucks, but it appears you quit making them.  Why?  The new GF bars are good, but not as good as the muffin.  I would love to see it return.  Also before I found out I had Celiacs disease, I really liked the Strawberries and Creme Frap.  Is there any chance you may come out with a GF one?  Also, is any of the other fraps GF?  Could you have a dedicated machine just for GF?    Thanks.
